Ingredients
1cupcooked quinoa
1cupcherry tomatoeshalved
1cucumberdiced
1/4cupred onionthinly sliced
1/4cupcrumbled feta cheeseoptional
1/4cuptoasted almonds or sunflower seeds
Clover microgreens for topping
Dressing
2tablespoonsOlive oil
1tablespoonBalsamic vinegar
1teaspoonHoney
Salt to taste
Pepper to taste
Instructions
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese (if using), and toasted almonds or sunflower seeds.
